Hummels Snr oversaw Mats emergence from the Bayern academy, prior to his departure for Dortmund in 2009 following a loan spell.
The role of youth coordinator will be filled by Stefan Beckenbauer, son of Bayern president Franz.
The younger Beckenbauer has been a part of Bayern s youth set-up since 2001.
Defending champions Dortmund lead the Bundesliga table by five points from second-placed Bayern.
